~ Our Daughter's Spice Cake ~

It was quite a chilly evening so our daughter made us a wonderful spice cake taken from the book, "Victorian Christmas Collection" by Peggy Stoks

~ Sensational Spice Cake ~
1 cup packed brown sugar
1/3 cup butter
1 cup water
1 tsp. cinnamon
1/2 tsp. ground cloves
1 tsp. baking soda
2 cups flour
1 tsp. baking powder

In a saucepan, combine first 5 ingredients. Heat to boiling and simmer for five minutes. Set aside to cool.
In a small cup, dissolve baking soda in a teaspoon or two of hot water. Pour into above cooled mixture. Add flour and baking powder, stir until blended. Bake in a greased 8x12 glass baking pan at 350 degrees for around 25 minutes, until a toothpick inserted into the center comes out clean.

~ Penuche Icing ~

1/2 cup butter

1 cup packed brown sugar

1/4 cup milk

1 and 3/4 - 2 cups powdered sugar

Melt butter in saucepan. Stir in brown sugar. Heat to boiling; cook and stir over low heat for two minutes. Stir in milk. Return to boil, stirring constantly. Cool to lukewarm. Gradually stir in powdered sugar until icing is of a good consistency to spread.
